Working Principle
Mechanical friction peeling: the potato skin is removed by mechanical friction through the contact of rotating knives or abrasive parts with the potato surface. For example, some peeling machines have rotating drums inside with abrasive material on the surface. The potatoes tumble inside the drums and rub against the abrasive surface so that the skins are rubbed off.
Chemical peeling: the use of chemical solutions (such as sodium hydroxide solution) on the potato skin corrosion, so that the skin and meat separation, and then through the water washing and other ways to remove the skin. This method of peeling is more effective, but need to pay attention to the concentration of chemical solution, processing time and subsequent cleaning links to ensure food safety and potato quality.
Steam peeling: the first potato with steam for a short period of time, so that the potato skin thermal expansion and separation of internal tissues, and then through mechanical devices or water impact to remove the skin. Steam peeling maintains the nutrients and taste of the potato and is relatively hygienic, but the equipment costs are high.
Common types
Drum type potato peeler: This is one of the more common types. It consists of a rotating drum and drive device, the drum is usually equipped with spiral blades or bumps, potato into the drum, with the rotation of the drum, in the internal tumbling and with the drum wall and other potato friction, so as to realize the peeling. This peeling machine is suitable for all sizes of potatoes, peeling efficiency is high, but there may be some potatoes peeling incomplete or surface damage.
Centrifugal Potato Peeler: The potato skin is removed by using centrifugal force. The potatoes are placed in a rotating centrifugal chamber. The centrifugal chamber rotates at high speed to generate centrifugal force, which causes the potatoes to come into close contact with and rub against the inner wall of the centrifugal chamber or the specialized peeling parts, so as to achieve the purpose of peeling. Centrifugal peeling machine peeling speed, the damage to the potato is relatively small, but for irregularly shaped potatoes may be less than ideal peeling effect.
Spray potato peeling machine: combines the role of steam and water flow. First steam pretreatment of potatoes, and then through the high-pressure spray device to the surface of the potato spray water, using the impact of the water flow will have been loosened potato skin washed off. This kind of peeling machine is hygienic, can effectively remove the potato skin, at the same time less damage to the potato, but the structure of the equipment is relatively complex, the cost is higher.
